Typically, I am a Delaware Portrait Photographer. Portrait. As in people. But sometimes I cook up something so delicious I can’t help but do a special photo shoot of my beloved subject sandwich! Who else loves grilled cheese? Who else loves avocados? And Who doesn’t love bacon? Seriously. Bacon. Yuuuuummmm! Combine it all together and you have the best sandwich ever!
I had been craving this sandwich for weeks before finally satisfying my desires. It is super simple to make, and doesn’t require you to measure out anything. Without further ado, I give you the recipe for the Grilled Pesto Bacon Avocado Cheese Sandwich.
Grilled Pesto Bacon Avocado Cheese Sandwich
Sourdough bread, sliced and buttered
Pesto (I love Costco’s Kirkland Brand)
Mozzarella
Bacon, cooked
Avocado, sliced
Tomatoes, sliced
Lettuce (optional, I didn’t use it in these images, mostly because I forgot. It is lettuce, easy to forget. Unlike the bacon. You can bet I’d never forget that!)
Heat your griddle or pan and butter one side of each slice of bread. On the other side, spread pesto. Place on griddle, butter side down. Add your cheese, bacon, avocado, tomato, and lettuce. Place a second slice of buttered bread with pesto on top. Heat until both sides are toasted golden brown, carefully turning.
When it is done cooking. Eat it. Obviously!
I made this sandwich two days in a row and enjoyed it immensely both times! now that I am finally writing this post, I am seriously salivating and contemplating cooking up some bacon and making a quick trip to the store for sourdough bread so I can have this for lunch today.
